Pumpkin Bread recipe #1
Made it today and it is really good!!! Light and fluffy and crunchy crust. So good. I got it from Robin O'Hara. Thanks Robin!
3 1/2 cups flour
3 cups sugar
2 tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg
1 1/2 tsp. salt
4 eggs, beaten
1 cup oil
2/3 cup water
1 can pumpkin (2 cups)
Combine dry ingredients. In a separate bowl, combine eggs, oil, water and pumpkin and mix well. Stir egg mixture into flour mixture. Pour batter into 3 greased 8x4 loaf pans or 2 greased 9x5 loaf pans. Bake at 350 degrees for 1 hour or until toothpick inserted in center comes out clean. Cool before slicing.

Hi Christie, have you ever tried this recipe with less sugar? I know sugar is important in the "chemistry" of baking but sometimes you can use less and it still comes out great. Have you tried substituting one cup of sugar for apple sauce for example? Just wondering...
